
80 g Sosa Freeze Dried Whole Strawberries
500 g Sosa Raw Pistachios
200 g water
800 g sugar
Grind the Sosa Freeze Dried Whole Strawberries and set aside.
Heat the Sosa Raw Pistachios at 80ºC / 176ºF in the microwave.
Put the pistachios in the Confi Kit.
Prepare the syrup: cook at 117ºC / 242ºF.
Add the syrup and keep on low speed until sugar recrystallizes.
Alternate syrup and strawberry powder.
Intercalate syrup and strawberry for the finished flavour.
Sieve the pistachios.
*Optional: dehydrate at 45ºC / 113ºF.
