Cocoa caviar

INGREDIENTS

400 g water
100 g simple syrup (TPT)
30 g Cocoa powder
2,5 g Alginate
1 l Water
10 Calcium Chloride

ELABORATION

Combine and mix with an immersion blender, + simple syrup + water + cocoa powder + Alginate. Heat until the cocoa dissolves completely
Mix water + Clorur
Take the mixture with a seringue and drop the in the Clorur bath. Keep the sphere in the bath for one minute
Wash the sphere in the bath of clean water
