Reverse mango and Campari sphere

INGREDIENTS

400 g Mango pure

50 g water

50 g Campari

10 g Gluconolactate

1 liter Water

5 g Alginate bath of clean water

ELABORATION

Combine and mix the mango pure + water + campari + gluconolacte

Mix the alginate and water With the measuring spoons drop the mango mixture in the alginate bath.

Keep it in for 3 minutes

Remove from the alginate bath and wash the sphere in the bath of clean water
