0,6 g Xantana 'CLEAR'
Alginate bath:
5 g Alginate
1 l. Mineral Water
Agua mineral

ELABORATION
For the reverse spherification, mix the Ingredients: of sphering on one side and the Ingredients: for the alginate bath on the other side.
Remove the air with the vacuum.
Fill a pipette with the mix of liquorice and drop it into the alginate bath.
It is important that the spheres are separated.
Let the spheres rest in the alginate bath for 3 minutes.
Clean the 'caviar'with mineral water.
